INGREDIENTS
7 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
2 tsp Olive Oil
1 clove Garlic
Salt & Pepper, to taste
1 tbsp Lemon Juice
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat. Once hot, add a drizzle of olive oil and sear the salmon skin-side down for 3-4 minutes until crisp, then flip and cook for another 3-4 minutes until desired doneness.
While the salmon cooks, steam the green beans until tender-crisp, about 4-5 minutes, and set aside.
For the cauliflower mash, steam the cauliflower florets along with a minced garlic clove until very tender, about 8-10 minutes.
Transfer the steamed cauliflower and garlic to a blender or use a hand masher. Add 1 tsp olive oil, salt, pepper, and lemon juice. Blend or mash until smooth and creamy.
Plate the seared salmon alongside the steamed green beans and a generous serving of garlic cauliflower mash. Garnish with a little extra lemon juice if desired and serve warm.
