350g Extra Firm Tofu
200g Broccolini
3 cloves Garlic
1 tbsp Cornstarch
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Press the extra firm tofu for at least 15 minutes to remove excess water. Cut the tofu into 1/2-inch cubes.
Preheat your oven to 400°F. In a bowl, gently toss the tofu cubes with a pinch of salt, pepper, and the tablespoon of cornstarch until evenly coated.
Place the tofu on a parchment-lined baking sheet. Lightly spray or drizzle a small amount of olive oil over the tofu for extra crispiness.
Bake the tofu in the preheated oven for 25-30 minutes, flipping halfway through, until golden and crispy.
While the tofu bakes, trim the broccolini ends and place them on another baking sheet. Mince the garlic and toss the broccolini with it, a drizzle of olive oil, salt, and pepper.
Roast the broccolini in the oven (or add them to the oven during the last 15 minutes of tofu baking) until tender and slightly caramelized, about 15 minutes.
Once both the tofu and broccolini are ready, serve together on a plate. Optionally, garnish with an extra sprinkle of pepper.
