6 oz Salmon Fillet
1 cup Steamed Broccoli
1 cup Cauliflower
2 tsp Olive Oil
1 clove Garlic
PREPARATION
Pat the salmon dry with a paper towel and season lightly with salt and pepper.
Heat a nonstick skillet over medium-high heat and add a few drops of olive oil.
Place the salmon skin-side down in the skillet, and sear for about 3-4 minutes until a golden crust forms. Flip the salmon and cook for an additional 3-4 minutes or until cooked to your liking.
While the salmon cooks, steam the broccoli florets until tender but still bright green, about 4-5 minutes.
For the cauliflower mash, steam the cauliflower until very soft, about 8-10 minutes. Transfer the cauliflower to a blender or use an immersion blender, add the garlic, 2 teaspoons olive oil, salt and pepper, and blend until smooth and creamy.
