INGREDIENTS
5 oz Salmon Fillet
6 Asparagus Spears
1 cup Cauliflower Florets
1/2 cup Plain Nonfat Greek Yogurt
1 tsp Olive Oil
Salt & Pepper, to taste
1 tsp Garlic Powder
PREPARATION
Season the salmon fillet with salt, pepper, and garlic powder on both sides.
Heat a non-stick skillet over medium-high heat and add the olive oil. Once hot, place the salmon fillet skin side down (if applicable) and sear for about 3-4 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until the salmon is just cooked through. Remove from the pan and set aside.
Steam the asparagus spears in a steamer basket over boiling water for about 4-5 minutes until tender but still crisp.
For the cauliflower mash, steam the cauliflower florets until very tender, about 8-10 minutes. Transfer them to a blender or food processor.
Add the Greek yogurt and a pinch of salt and pepper to the cauliflower. Blend until smooth and creamy. Adjust seasoning as desired.
Plate the salmon alongside a serving of steamed asparagus and a generous scoop of cauliflower mash. Serve immediately and enjoy.
