PREPARATION
Spray or lightly coat a non-stick skillet with a little olive oil and add half of the 1 tbsp olive oil over medium heat. Sauté the fresh spinach until wilted, about 2-3 minutes, then remove it from the pan and set aside.
In the same skillet, crumble the turkey sausage and heat until lightly browned, about 3-4 minutes. Once cooked, transfer the sausage to a bowl.
