Seared Salmon with Garlic Green Beans and Cauliflower Mash
A beautifully balanced dinner featuring a perfectly seared salmon fillet accented with a drizzle of lemon, served alongside tender garlic green beans and a velvety cauliflower mash. This vibrant dish offers a burst of fresh flavors and satisfying textures in every bite.
INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
2 cloves Garlic
1 tsp Olive Oil (for beans)
0.5 tsp Olive Oil (for salmon)
1 tbsp Lemon Juice
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season lightly with salt and pepper. Drizzle 0.5 teaspoon of olive oil over the fillet.
Heat a non-stick skillet over medium-high heat. Sear the salmon skin-side down for about 3-4 minutes, then flip and cook for another 3-4 minutes until the salmon is just cooked through and has a golden crust.
Meanwhile, steam or microwave the cauliflower florets until tender. Then, mash lightly with a fork, adding a pinch of salt and a splash of lemon juice for brightness.
In another skillet, heat 1 teaspoon of olive oil over medium heat. Add the minced garlic (from 2 cloves) and sauté until fragrant, about 30 seconds. Add the green beans and toss to coat. Sauté for about 4-5 minutes until the beans are tender-crisp. Season with a little salt and pepper.
Plate the seared salmon alongside a generous serving of garlic green beans and a scoop of cauliflower mash. Drizzle a bit of lemon juice over the salmon for extra flavor and serve immediately.
