INGREDIENTS
1/2 medium head Cauliflower (≈300g)
200g Tempeh
0.5 tbsp Olive Oil
2 tbsp Buffalo Sauce
0.5 tsp Garlic Powder
0.5 tsp Smoked Paprika
Handful of Green Onions
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Cut the cauliflower into bite-sized florets and press the tempeh into cubes.
In a large bowl, toss the cauliflower and tempeh with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
Spread the mixture onto the prepared baking sheet in a single layer.
Roast in the oven for 20-25 minutes, stirring halfway through, until the cauliflower is tender and edges are starting to crisp.
Remove from the oven and drizzle the buffalo sauce over the roasted cauliflower and tempeh, gently tossing to coat evenly.
Return the coated mixture to the oven for an additional 5-7 minutes to allow the sauce to set.
Garnish with chopped green onions and serve warm.
