Paneer Spinach Scramble with Toasted Seeds
Relish a hearty, protein-packed Indian-inspired breakfast featuring creamy paneer lightly scrambled with fresh spinach, accented by aromatic spices and garnished with crunchy toasted mixed seeds, served alongside a crisp slice of whole wheat toast.
INGREDIENTS
85g Paneer
1 cup chopped Fresh Spinach
20g Mixed Seeds
1 slice Whole Wheat Bread
1/4 medium Onion
1 tsp Olive Oil
1/2 tsp Turmeric Powder
1/2 tsp Cumin Powder
Salt & Pepper to taste
PREPARATION
Crumbly or dice the paneer into bite-sized pieces and set aside.
Heat olive oil in a non-stick pan over medium heat. Add the finely chopped onion and sauté until softened and translucent.
Add the turmeric powder, cumin powder, and lightly salt and pepper the onions. Stir for 30 seconds to release the spices' aroma.
Mix in the paneer and gently scramble it with the spiced onions for about 2 minutes to warm through and lightly brown.
Add the chopped spinach and continue stirring for another 1-2 minutes until the spinach wilts but retains its vibrant color.
Meanwhile, in a dry small pan, toast the mixed seeds over low heat for 2-3 minutes, stirring frequently until they become fragrant and slightly crisp.
Toast the whole wheat bread slice on a skillet or toaster until it’s golden brown.
Plate the paneer-spinach scramble, garnish with the toasted seeds on top, and serve alongside the warm toast.
