6 oz Chicken Breast
1 cup Romaine Lettuce (chopped)
2 tbsp Fresh Parsley
2 tbsp Fresh Basil
1/2 cup Cherry Tomatoes
1/4 cup Cucumber slices
2 tbsp Plain Nonfat Greek Yogurt
1/2 tbsp + 1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
1 tbsp Lemon Juice
Spices (Smoked Paprika, Cumin, Salt & Pepper) to taste
PREPARATION
Preheat the oven to 400°F.
Season the chicken breast with smoked paprika, cumin, salt, and pepper. Optionally, rub a small amount of olive oil over the chicken.
