INGREDIENTS
6 oz Salmon Fillet
1 cup Steamed Broccoli
1 cup Cauliflower
1 tsp Olive Oil
1 tbsp Fresh Herbs (Parsley, Dill, or Basil)
1 clove Garlic
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season generously with salt and pepper on both sides.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon fillet skin-side down and sear for about 3-4 minutes until a crispy crust forms.
Carefully flip the salmon and sear the other side for an additional 3 minutes, or until the salmon is cooked to your desired doneness.
While the salmon cooks, steam the broccoli florets in a steamer basket over boiling water for about 4-5 minutes until tender yet crisp.
Steam the cauliflower florets (or use the raw cauliflower if you prefer a lighter mash) for 6-8 minutes until soft. Then transfer to a bowl.
Add the olive oil, chopped fresh herbs, and a crushed garlic clove (or minced garlic) to the steamed cauliflower. Mash until smooth and season with salt and pepper to taste.
Plate the seared salmon alongside the steamed broccoli and a serving of herb-cauliflower mash. Garnish with additional fresh herbs if desired and serve immediately.
