Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Enjoy a perfectly balanced dinner featuring a seared salmon fillet paired with garlicky green beans and a light, creamy sweet potato mash. The crisp exterior of the salmon contrasts beautifully with the tender vegetables, while a hint of olive oil and garlic brings all the flavors together in a dish that’s as nourishing as it is delicious.
INGREDIENTS
7 oz Salmon Fillet (198g)
1 cup Green Beans (125g)
1/4 medium Sweet Potato (50g)
1/4 tsp Olive Oil (approx. 1.2g)
2 cloves Garlic
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Pat the salmon fillet dry and season it lightly with salt and pepper on both sides.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon fillet skin-side down and sear for about 3-4 minutes until you achieve a golden crust.
Flip the salmon and cook for an additional 3-4 minutes or until it reaches your desired doneness. Remove from the skillet and let rest.
In the same skillet, reduce heat to medium. Add a quarter teaspoon of olive oil and add minced garlic. Sauté until fragrant, then add green beans. Sauté the green beans for about 4-5 minutes until tender-crisp.
Meanwhile, steam or boil the sweet potato until very soft. Mash it with a fork until smooth. Season lightly with salt and pepper to taste.
Plate the seared salmon alongside a serving of garlic green beans and a dollop of sweet potato mash. Serve immediately.
