INGREDIENTS
5 oz Turkey Breast (142g)
1 cup Green Beans (125g)
1 medium Sweet Potato (114g)
3 tsp Olive Oil (13.5g)
1 tsp Butter (5g)
1 clove Garlic
PREPARATION
Season the turkey breast lightly with salt and pepper.
Heat a nonstick skillet over medium-high heat and add a drizzle from the 3 tsp olive oil.
Sear the turkey breast for about 4-5 minutes per side until golden and cooked to an internal temperature of 165°F. Remove from the skillet and let it rest.
While the turkey is cooking, bring a pot of water to a boil. Add the green beans and blanch for 3-4 minutes until crisp-tender, then drain.
In a separate small pan, heat a minimal splash of olive oil and sauté the garlic (minced or sliced) for about 1-2 minutes until fragrant.
Toss the blanched green beans with the sautéed garlic.
For the sweet potato mash, pierce the sweet potato with a fork and microwave it for about 5-6 minutes until soft (or steam until tender). Scoop out the flesh into a bowl.
Mix in the 1 tsp butter with the sweet potato until smooth. Season with a pinch of salt and pepper to taste.
Slice the rested turkey breast and serve alongside the garlic green beans and the sweet potato mash.
