Enjoy a beautifully seared salmon fillet paired with vibrant steamed asparagus and a velvety cauliflower mash lightly enriched with a hint of creamy Greek yogurt. This dinner offers a balance of rich flavors and satisfying textures, making it both nourishing and delightfully indulgent.
INGREDIENTS
6 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower
1/8 cup Non-Fat Greek Yogurt
1 teaspoon Olive Oil
1 clove Garlic
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season both sides lightly with salt and pepper.
Heat olive oil in a non-stick skillet over medium-high heat. Once hot, sear the salmon fillet skin-side down for about 4 minutes, then flip and cook for an additional 3 minutes or until it reaches desired doneness.
While the salmon cooks, trim the asparagus and steam it until tender yet crisp, about 4-5 minutes.
For the cauliflower mash, steam the cauliflower florets with the garlic until very soft, about 8 minutes.
Transfer the steamed cauliflower and garlic into a blender. Add non-fat Greek yogurt and blend until smooth. Season with salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a generous scoop of cauliflower mash. Serve immediately.
