INGREDIENTS
250g Extra Firm Tofu
1 oz Raw Peanuts (crushed)
3 cups Baby Spinach
1/2 medium Red Bell Pepper
1/2 cup Broccoli Florets
1 tbsp Soy Sauce
1 tsp Fresh Ginger (grated)
1 clove Garlic
1 tsp Lime Juice
1 tsp Honey
1 tsp Sesame Oil
1 tbsp Cornstarch
PREPARATION
Press the tofu to remove excess moisture and cut into 1-inch cubes.
Place the tofu cubes in a bowl and gently toss with the cornstarch until evenly coated.
In a shallow dish, spread the crushed raw peanuts. Lightly press each tofu cube into the peanuts to form a crust.
Heat a non-stick skillet over medium heat. Add the tofu cubes and cook until all sides are golden and crispy, about 3-4 minutes per side. If needed, spray a minimal amount of oil.
While the tofu cooks, prepare the fresh greens. In a large bowl, combine the baby spinach, sliced red bell pepper, and broccoli florets.
In a small bowl, whisk together soy sauce, grated ginger, minced garlic, lime juice, honey, and sesame oil to form the peanut sauce.
Once the tofu is crispy, gently toss it with the mixed greens and drizzle the peanut sauce over the top.
Serve immediately and enjoy the harmonious blend of crunchy tofu and fresh, vibrant greens.
