INGREDIENTS
6 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower
1 tbsp Olive Oil
1 tbsp Nonfat Greek Yogurt
1 clove Garlic
Salt and Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat with a drizzle of olive oil. When hot, place the salmon skin-side down and sear for about 4-5 minutes until the skin is crisp.
Flip the salmon and cook for an additional 3-4 minutes until interior reaches desired doneness. Remove from heat and let rest.
Steam the asparagus in a steamer or a covered pot with a small amount of water for about 4-5 minutes until tender-crisp.
Meanwhile, break the cauliflower into florets and steam until very tender, about 8-10 minutes.
In a bowl, combine the steamed cauliflower, garlic, nonfat Greek yogurt, and a dash of salt and pepper. Blend or mash until smooth and creamy.
Plate the salmon alongside the steamed asparagus and a generous serving of cauliflower mash. Serve immediately.
