INGREDIENTS
1 cup Liquid Egg Whites (252g)
3 ounces Turkey Sausage (85g)
1 medium Sweet Potato (114g)
1 cup Fresh Spinach (30g)
1 teaspoon Olive Oil (5g) for sausage and spinach
1 teaspoon Extra Olive Oil (5g) for sweet potato
1/2 Avocado (100g)
PREPARATION
Preheat your oven to 400°F. Scrub the sweet potato clean, then pierce it with a fork a few times. Rub it lightly with a teaspoon of olive oil and place it on a baking sheet. Roast in the oven for about 35-40 minutes, or until tender.
While the sweet potato is roasting, heat a non-stick pan over medium heat and add the remaining teaspoon of olive oil.
Slice the turkey sausage into rounds or crumble it, and add to the pan, cooking for 3-4 minutes until lightly browned.
Add the liquid egg whites to the pan and gently stir with the sausage. Allow the egg whites to set slightly, then add the fresh spinach. Continue to scramble until the spinach wilts and the eggs are fully cooked, about 3-4 minutes.
Once the sweet potato is done, remove it from the oven. Serve the sausage and egg white scramble alongside the roasted sweet potato, and top with sliced avocado for a creamy finish.
