80 g Sweet Potato
100 g Green Beans
2 garlic cloves
1 tsp Olive Oil

PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Peel and chop the sweet potato into small cubes. Boil in lightly salted water until tender, about 10-12 minutes.
While the sweet potato cooks, trim the ends of the green beans and rinse thoroughly.
Heat half the olive oil in a skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
Add the green beans and sauté for about 4-5 minutes until they just begin to soften while still retaining a bit of crunch. Season with salt and pepper.
In another non-stick skillet, heat the remaining olive oil over medium-high heat. Place the salmon fillet skin-side down and sear for 3-4 minutes, then flip and cook for another 3-4 minutes until the salmon is cooked through and has a nice golden crust.
