This dish brings together a satisfying crunch, balanced flavors, and wholesome ingredients that make it a perfect option for breakfast, lunch, or dinner.
INGREDIENTS
4 oz Chicken Breast
1 6-inch Whole Wheat Tortilla
1 oz Part-Skim Mozzarella Cheese
0.25 medium Red Bell Pepper
1 tsp Olive Oil
Dash of Cajun Seasoning
Salt & Pepper to taste
PREPARATION
Slice the chicken breast into thin strips and season with salt, pepper, and a dash of Cajun seasoning.
Heat the olive oil in a non-stick skillet over medium heat. Add the seasoned chicken strips and cook until they are lightly browned and cooked through, about 5-7 minutes.
While the chicken cooks, thinly slice the red bell pepper.
Place the whole wheat tortilla on a clean, dry surface. Sprinkle half of the mozzarella cheese evenly over one half of the tortilla.
Layer the cooked chicken strips and red bell pepper slices on top of the cheese.
Sprinkle the remaining mozzarella cheese over the filling.
Fold the tortilla in half to encase the filling and gently press down.
Return the quesadilla to the skillet (or use a clean skillet) and cook on low-medium heat for 2-3 minutes per side until the tortilla is golden and the cheese is melted.
Remove from the skillet, slice into wedges, and serve warm.
