INGREDIENTS
3 oz Lean Ground Beef
1 small Egg
2 tbsp Whole Wheat Breadcrumbs
1 cup Whole Wheat Spaghetti (cooked)
2 medium Fresh Tomatoes
2 cloves Garlic
2 tbsp Fresh Basil
1 tsp Olive Oil
Salt & Pepper (to taste)
PREPARATION
Preheat your oven to 400°F.
In a bowl, combine lean ground beef, a beaten small egg, and whole wheat breadcrumbs. Season with a pinch of salt and pepper.
Form the mixture into small meatballs, about the size of a golf ball. Place them on a baking sheet lined with parchment paper.
Bake the meatballs in the preheated oven for 15-20 minutes or until cooked through.
While the meatballs bake, prepare the marinara sauce. Dice the fresh tomatoes and mince the garlic.
In a pan over medium heat, add the olive oil and sauté the garlic for about 1 minute until fragrant. Add diced tomatoes and simmer for 8-10 minutes. Stir in fresh basil and adjust seasoning with salt and pepper.
Meanwhile, cook the whole wheat spaghetti according to package instructions until al dente. Drain and set aside.
Serve the meatballs over a bed of spaghetti and spoon the fresh marinara sauce on top. Garnish with extra basil if desired.
