Enjoy a vibrant dinner featuring perfectly seared salmon paired with tender roasted asparagus and a creamy cauliflower mash, all brought together with hints of olive oil and fresh seasonings for a balanced and satisfying meal.
INGREDIENTS
7 oz Salmon Fillet (198g)
1 cup Asparagus (134g)
1 tsp Extra Virgin Olive Oil (for asparagus, 4.5g)
1 cup Cauliflower (107g)
1 tsp Extra Virgin Olive Oil (for mash, 4.5g)
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Preheat your oven to 425°F.
Trim the asparagus and toss with 1 tsp of olive oil and a pinch of salt and pepper. Spread evenly on a baking sheet.
Roast the asparagus in the preheated oven for about 12-15 minutes until tender and slightly browned.
Meanwhile, steam or boil the cauliflower until it is very tender, about 8-10 minutes.
Drain the cauliflower and transfer it to a blender or food processor. Add 1 tsp of olive oil, a pinch of salt and pepper, and blend until smooth and creamy. Adjust seasonings as needed.
Season the salmon fillet with a pinch of salt and pepper. Heat a non-stick skillet over medium-high heat and add a little oil if needed.
Place the salmon skin-side down on the hot skillet and sear for about 3-4 minutes until the skin is crispy, then carefully flip and cook for an additional 2-3 minutes until the salmon is just cooked through.
Plate the seared salmon alongside the roasted asparagus and add a serving of the cauliflower mash. Enjoy your balanced, protein-packed dinner!
