INGREDIENTS
250g Firm Tofu
100g Shelled Edamame
1 cup Broccoli (chopped)
1 medium Red Bell Pepper (sliced)
1 medium Carrot (julienned)
1 tbsp Cornstarch
1 tbsp Sesame Oil
1 tbsp Low-Sodium Soy Sauce
1 tsp Toasted Sesame Seeds
1 clove Garlic
PREPARATION
Press the tofu for 10-15 minutes to remove excess water, then cut it into bite-sized cubes.
In a bowl, gently toss the tofu cubes with cornstarch until evenly coated.
Heat sesame oil in a large non-stick skillet or wok over medium-high heat.
Add the tofu cubes and fry until all sides are golden and crispy, about 6-8 minutes. Remove tofu from the skillet and set aside.
In the same skillet, add minced garlic and stir-fry for about 30 seconds until fragrant.
Add chopped broccoli, sliced red bell pepper, and julienned carrot. Stir-fry the vegetables for 3-4 minutes until they start to become tender but still retain crunch.
Stir in the shelled edamame and return the crispy tofu to the skillet.
Drizzle with low-sodium soy sauce and toss everything together until well combined and heated through.
Finish the dish with a light sprinkle of toasted sesame seeds before serving.
