INGREDIENTS
5.5 oz Atlantic Salmon Fillet (156g)
1.5 cups Green Beans (135g)
1 cup Cauliflower (107g)
2 tsp Olive Oil
2 cloves Garlic
Salt & Black Pepper to taste
PREPARATION
Pat the salmon dry and season with salt and black pepper.
Heat a non-stick skillet over medium-high heat and add 1 teaspoon of olive oil. Once hot, place the salmon skin-side down and sear for about 3-4 minutes, then flip and cook another 3 minutes or until desired doneness is reached.
While the salmon cooks, steam the green beans until tender-crisp, about 4-5 minutes. In a separate pan, lightly sauté minced garlic in 1 teaspoon olive oil for about 30 seconds and toss the cooked green beans in the garlic oil, seasoning with salt and pepper to taste.
Prepare the cauliflower mash by steaming the cauliflower florets until soft (about 8 minutes). Transfer to a bowl and mash with a fork or immersion blender, incorporating the remaining garlic (if desired) and seasoning lightly with salt and pepper.
Plate the seared salmon alongside a generous serving of garlic green beans and a smooth scoop of cauliflower mash, then serve immediately.
