INGREDIENTS
1 medium Potato (150g)
½ cup Cooked Green Peas (80g)
100g Firm Tofu
¼ cup Chickpea Flour (30g)
1 large Egg (50g)
1 tsp Olive Oil
½ cup Fresh Cilantro (chopped)
100g Non-fat Greek Yogurt
1 tbsp Lemon Juice
1 clove Garlic
1 tsp Ground Cumin
1 tsp Ground Coriander
Salt and Black Pepper to taste
PREPARATION
Boil the potato until tender, then peel and mash in a bowl.
Lightly mash the cooked green peas, leaving some texture, and add them to the mashed potato.
Crumble the firm tofu and mix it into the potato-pea blend.
Stir in the chickpea flour and beaten egg, then season with ground cumin, ground coriander, salt, and black pepper.
Gently combine all ingredients until a cohesive mixture forms.
Shape the mixture into uniform patties.
Heat olive oil in a non-stick pan over medium heat and cook the patties for about 3-4 minutes on each side until golden and crispy.
While the patties are cooking, blend chopped cilantro, Greek yogurt, lemon juice, garlic, salt, and pepper to create a fresh, creamy chutney.
Serve the hot patties drizzled or accompanied by the cilantro chutney.
