INGREDIENTS
1 piece (150g) Chicken Breast
1 cup (70g) Mushrooms
2 cloves Garlic
0.25 cup (60g) Nonfat Greek Yogurt
1 teaspoon Olive Oil
1 tablespoon Fresh Parsley
Salt & Pepper to taste
PREPARATION
Pat the chicken breast dry and season generously with salt and pepper on both sides.
Heat the olive oil in a skillet over medium-high heat until shimmering.
Place the chicken breast in the skillet and cook for about 5-6 minutes per side, or until golden-brown and cooked through. Transfer to a plate and keep warm.
In the same skillet, add the sliced mushrooms and minced garlic. Sauté for about 3-4 minutes, stirring frequently, until the mushrooms soften and begin to brown.
Reduce the heat to low and stir in the nonfat Greek yogurt. Allow the mixture to warm gently and thicken slightly, creating a creamy sauce. Adjust seasoning with salt and pepper.
Return the chicken to the skillet, nestling it into the creamy garlic mushrooms. Spoon some of the sauce over the chicken.
Garnish with fresh parsley before serving.
