3 Large Eggs
100g Lean Turkey Sausage
60g Baby Spinach
50g Red Bell Pepper
5g Olive Oil

PREPARATION
Preheat a skillet over medium heat and add olive oil.
Peel and dice the sweet potato into small cubes. Add them to the skillet and cook until they begin to soften and crisp up, about 8-10 minutes, stirring occasionally.
Slice the turkey sausage into rounds and add to the skillet once the sweet potatoes are partially cooked. Sauté for about 3-4 minutes until lightly browned.
Dice the red bell pepper and add it to the skillet along with the baby spinach. Cook until the spinach wilts and the bell pepper softens, about 2-3 minutes. Season with salt, pepper, and garlic powder.
