INGREDIENTS
6 oz Lean Ground Turkey
1 portion Sweet Potato (approx. 150g)
1/2 cup Mixed Peas and Carrots
1/4 cup Diced Onion
1 clove Garlic
1 tsp Olive Oil
1/2 tsp Dried Thyme
1/2 tsp Dried Rosemary
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Peel and chop the sweet potato into cubes, then steam or boil until soft. Mash the sweet potato with a bit of salt and set aside.
In a skillet over medium heat, warm the olive oil. Sauté the diced onion until translucent, then add the minced garlic and cook for another minute.
Add the lean ground turkey to the skillet. Cook, breaking it apart with a spatula, until it is browned and fully cooked. Season with salt, pepper, thyme, and rosemary.
Mix in the peas and carrots. Allow the vegetables to heat through, stirring occasionally.
Transfer the turkey and vegetable mixture to a baking dish, spreading it evenly at the bottom.
Carefully layer the mashed sweet potato over the turkey mixture, smoothing the top with the back of a spoon.
Place the baking dish in the oven and bake for 15-20 minutes until the top is slightly golden.
Remove from the oven and serve warm.
