INGREDIENTS
400g Extra Firm Tofu
200g Broccoli
1 Tbsp Olive Oil
1 tsp Fresh Thyme
1 tsp Fresh Rosemary
2 cloves Garlic
1 Tbsp Lemon Juice
Salt and Pepper to taste
PREPARATION
Press the tofu to remove excess moisture and cut it into 1/2-inch thick steaks.
Preheat your oven to 425°F. Toss the broccoli with a drizzle of olive oil, salt, and pepper, and spread it evenly on a baking sheet.
Roast the broccoli for 18-20 minutes until tender and crispy on the edges.
In a small bowl, whisk together the remaining olive oil, lemon juice, minced garlic, thyme, rosemary, salt, and pepper.
Brush the tofu steaks generously with the herb mixture on both sides.
Heat a non-stick skillet over medium-high heat and add a small amount of olive oil.
Pan-sear the tofu steaks for about 4-5 minutes on each side until golden brown and slightly crispy.
Plate the tofu with a serving of roasted broccoli, and finish with a light drizzle of any remaining herb dressing over the top.
