Preheat your oven to 400°F.
Wash and scrub the sweet potatoes. Dice them into 1-inch cubes for even roasting.
Toss the sweet potato cubes in 2 tablespoons of olive oil, a pinch of salt, and black pepper.
Spread the seasoned sweet potatoes on a baking sheet in a single layer and roast for 25-30 minutes, stirring halfway through until tender and slightly crispy.
While the sweet potatoes roast, cook the turkey bacon in a skillet over medium heat until it becomes crispy, then remove and set aside.
In the same skillet, pour in the egg whites and scramble them until they just set, being careful not to overcook.
Chop the crispy turkey bacon and add it back into the skillet with the scrambled egg whites, stirring to combine.
Season the scramble with additional salt and pepper if desired.
Transfer the turkey bacon and egg white scramble to a plate and serve alongside the roasted sweet potatoes.
