6 oz Salmon Fillet
100 g Green Beans
1 cup Cauliflower
1 tbsp Nonfat Greek Yogurt
2 cloves Garlic
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat and add olive oil.
Once the oil is shimmering, place the salmon fillet skin-side down (if skin is on) and sear for about 4 minutes. Flip and sear the other side for another 3-4 minutes, or until the salmon reaches your preferred doneness.
While the salmon cooks, steam or boil the green beans for about 4-5 minutes until tender-crisp. In the last minute, add minced garlic to the green beans and toss to combine.
For the cauliflower mash, steam the cauliflower florets until very soft, approximately 8-10 minutes. Transfer the cauliflower to a blender or food processor, add the Greek yogurt, and blend until smooth. Season with salt and pepper to taste.
