INGREDIENTS
7 oz Salmon Fillet
1 cup Green Beans
1 medium Sweet Potato (approx. 100g)
1 tsp Olive Oil
1 clove Garlic
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season both sides generously with salt and pepper.
Preheat a non-stick skillet over medium-high heat and add the olive oil.
Place the salmon skin-side down in the skillet (if the fillet has skin) and cook for about 3-4 minutes. Flip the salmon and cook for another 3-4 minutes until seared on both sides and cooked through.
Meanwhile, steam or boil the green beans until they are just tender, about 4-5 minutes. In the last minute of cooking, toss them with minced garlic to infuse flavor.
Peel and cube the sweet potato. Boil in lightly salted water until fork-tender, about 10-12 minutes, then drain and mash until smooth. Season with a pinch of salt and pepper.
Plate the salmon fillet alongside a serving of garlic green beans and a generous scoop of sweet potato mash. Serve warm.
