Seared Salmon with Garlic Green Beans and Cauliflower Mash
Enjoy a beautifully balanced dinner featuring a perfectly seared salmon fillet, tender garlic sautéed green beans, and a creamy cauliflower mash enriched with a touch of tangy Greek yogurt. A drizzle of olive oil ties the dish together with a subtle richness, making it as visually appealing as it is satisfying.
INGREDIENTS
5 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower (cooked & mashed)
1/4 cup Plain Nonfat Greek Yogurt
2 tsp Extra Virgin Olive Oil
2 cloves Garlic
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry and season generously with salt and pepper.
Heat a non-stick skillet over medium-high heat and add 1 tsp of olive oil.
Once the oil is shimmering, add the salmon fillet skin-side down. Sear for about 3-4 minutes until a golden crust forms, then gently flip and cook for another 3-4 minutes until the salmon is just cooked through. Remove from the skillet and keep warm.
In the same skillet, add the remaining olive oil. Sauté minced garlic for about 30 seconds until fragrant.
Add the green beans and toss to coat evenly in the garlic-infused oil. Sauté for 4-5 minutes until the beans are tender-crisp. Season with salt and pepper to taste.
For the cauliflower mash, steam or boil cauliflower florets until very tender. Transfer to a bowl and mash with a fork or blend lightly until smooth. Stir in the plain nonfat Greek yogurt and a pinch of salt and pepper. Adjust texture with a little water if needed.
To serve, plate the cauliflower mash, place the seared salmon on top or beside, and arrange the garlic green beans alongside. Drizzle any remaining pan juices over the salmon for extra flavor.
