1 cup Broccoli
1/2 tbsp Olive Oil (for broccoli)
1.5 cups Cauliflower
1/2 cup Skim Milk
2 tsp Olive Oil (for mashed cauliflower)
1 clove Garlic
Salt and Pepper to taste
PREPARATION
Preheat the oven to 425°F.
Toss the broccoli with 1/2 tablespoon olive oil, and season lightly with salt and pepper. Spread on a baking sheet and roast in the oven for 15-20 minutes until tender and slightly browned.
Meanwhile, steam the cauliflower until very tender, about 10 minutes.
In a small saucepan over low heat, warm the skim milk along with 2 teaspoons of olive oil and the minced garlic to infuse the flavors. Do not boil.
Transfer the steamed cauliflower to a bowl and pour in the warm garlic milk. Mash until smooth. Adjust seasoning with salt and pepper to taste.
