INGREDIENTS
6 oz Shrimp
1 cup cooked Whole Wheat Pasta
1 tsp Olive Oil
1/2 cup Cherry Tomatoes
1 Garlic clove
2 tbsp Fresh Basil
Salt and Pepper to taste
PREPARATION
Bring a pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
While the pasta cooks, pat the shrimp dry and season lightly with salt and pepper.
Heat the olive oil in a skillet over medium-high heat. Add the shrimp and sear for 2-3 minutes on each side until they turn pink and are fully cooked. Remove shrimp from the pan.
In the same skillet, add minced garlic and halved cherry tomatoes. Sauté for about 2 minutes until the tomatoes begin to soften.
Add the drained pasta to the skillet along with torn fresh basil leaves. Toss well to mix the flavors, adjusting seasoning with salt and pepper as needed.
Top the pasta with the pan-seared shrimp and serve immediately.
