1 cup Steamed Broccoli (~150g)
1 medium Sweet Potato (~150g)
1 tbsp Olive Oil
1 clove Garlic
Pinch Salt
Pinch Black Pepper
PREPARATION
Pat the salmon dry with a paper towel and season with a pinch of salt and black pepper.
Heat a non-stick skillet over medium-high heat and add half of the olive oil.
Place the salmon skin-side down and sear for 3-4 minutes on each side or until cooked to your liking. Remove from heat and set aside.
While the salmon is cooking, peel and chop the sweet potato into cubes. Boil in a pot of water until tender, about 15 minutes.
Drain the sweet potatoes and transfer to a bowl. Add minced garlic, the remaining olive oil, a pinch of salt, and a dash of pepper. Mash until smooth and creamy.
