Crispy Baked Tofu with Roasted Green Beans and Quinoa
Enjoy a balanced and flavorful dinner featuring crispy baked tofu with a tangy soy marinade, perfectly roasted green beans, and a bed of fluffy quinoa. This dish complements its textures and rich flavors with a light, satisfying crunch and a hint of garlic for depth.
INGREDIENTS
200g Firm Tofu
1 cup Green Beans
1 cup Cooked Quinoa
1 tsp Olive Oil
1 tbsp Low Sodium Soy Sauce
0.5 tsp Garlic Powder
0.25 tsp Black Pepper
PREPARATION
Preheat your oven to 400°F (200°C).
Press the tofu gently between paper towels to remove excess moisture, then cut it into 1/2-inch cubes.
In a bowl, whisk together the low sodium soy sauce, garlic powder, and black pepper. Gently toss the tofu cubes in the marinade to coat evenly.
Place the marinated tofu on a parchment-lined baking sheet. Drizzle half of the olive oil over the tofu.
Trim the ends of the green beans and toss them in a bowl with the remaining olive oil, a pinch more garlic powder if desired, and a sprinkle of black pepper. Arrange them on a separate section of the baking sheet or on another pan.
Bake the tofu and green beans in the preheated oven for 25-30 minutes, turning halfway through, until the tofu is golden and crispy and the green beans are tender with a slight char.
While the tofu and green beans are baking, prepare the quinoa if not already cooked. Fluff the quinoa with a fork.
Plate the quinoa as a base, and top with the crispy tofu and roasted green beans. Serve warm and enjoy your balanced meal.
