INGREDIENTS
350g Firm Tofu
1 cup Broccoli (chopped)
1 medium Red Bell Pepper (sliced)
1 medium Carrot (julienned)
1 tbsp Sesame Seeds
1 tbsp Low-Sodium Soy Sauce
1 tsp Fresh Ginger (grated)
2 cloves Garlic (minced)
1 tsp Sesame Oil
1 tsp Cornstarch
PREPARATION
Press the tofu to remove excess moisture and cut it into 1-inch cubes.
In a bowl, gently toss tofu cubes with cornstarch until evenly coated.
Heat sesame oil in a large non-stick skillet over medium-high heat. Add the tofu cubes and pan-fry until golden and crispy on all sides, about 6-8 minutes. Remove tofu from the pan and set aside.
In the same skillet, add minced garlic, grated ginger, chopped broccoli, sliced red bell pepper, and julienned carrot. Stir-fry the vegetables for about 4-5 minutes until they begin to soften but still retain a bit of crunch.
Return the crispy tofu to the skillet. Drizzle low-sodium soy sauce over the mixture and toss gently to combine all the flavors.
Finish by sprinkling toasted sesame seeds over the stir-fry, and stir to combine. Serve hot as a nutritious meal for breakfast, lunch, or dinner.
