INGREDIENTS
300g Extra Firm Tofu
0.5 cup Shelled Edamame
1 medium Red Bell Pepper
1 medium Zucchini
1 cup Broccoli
1 tbsp Sesame Oil
1 tbsp Soy Sauce
2 cloves Garlic
1 tsp Fresh Ginger
1 tsp Toasted Sesame Seeds
PREPARATION
Press the tofu to remove excess water and cut it into bite-sized cubes.
Heat the sesame oil in a large non-stick skillet or wok over medium-high heat.
Add the tofu cubes and stir-fry until they turn golden brown on all sides, about 5-7 minutes.
Add minced garlic and grated ginger to the pan, stirring briefly until fragrant.
Toss in the red bell pepper, zucchini, broccoli, and edamame. Stir-fry for another 4-5 minutes until the vegetables are tender yet crisp.
Drizzle with soy sauce and gently combine to coat all the ingredients evenly.
Remove from heat, sprinkle with toasted sesame seeds, and serve immediately.
