Enjoy a vibrant plate featuring a perfectly seared salmon fillet paired with tender roasted asparagus and a silky cauliflower mash enriched with a touch of nonfat Greek yogurt. This dish combines bright, fresh flavors with savory, hearty textures ideal for a balanced dinner.
INGREDIENTS
6 oz Salmon Fillet (170g)
1 cup Asparagus (134g)
1 cup Cauliflower (107g)
1/4 cup Nonfat Greek Yogurt (60g)
1 tsp Olive Oil (5g)
Salt and Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Preheat a non-stick skillet over medium-high heat. Once hot, add the salmon fillet skin-side down and sear for about 3-4 minutes. Flip and cook for an additional 3 minutes, or until the salmon is cooked to your liking.
Meanwhile, preheat your oven to 400°F. Toss the asparagus lightly with a pinch of salt and place on a baking sheet. Roast in the oven for 10-12 minutes until tender.
Steam the cauliflower until very soft, about 8-10 minutes. Transfer to a bowl and add the nonfat Greek yogurt, olive oil, salt, and pepper. Mash until smooth and creamy.
Plate the seared salmon alongside the roasted asparagus and a serving of cauliflower mash. Garnish with additional pepper if desired and serve warm.
