INGREDIENTS
3 whole eggs (approx. 150g)
2 egg whites (approx. 66g)
2 ounces turkey sausage (56g)
100g sweet potato, diced
1 cup fresh spinach (30g)
1/2 cup diced red bell pepper (75g)
1 teaspoon olive oil (5g)
2 tablespoons fresh herbs (parsley & cilantro, 8g)
PREPARATION
Preheat the oven to 400°F (200°C) for the sweet potatoes.
Toss the diced sweet potatoes lightly in olive oil and a pinch of salt; spread them on a baking sheet in a single layer and roast for 20-25 minutes or until tender and slightly crisp.
In a bowl, whisk together the whole eggs and egg whites until smooth.
Chop the turkey sausage into small pieces. In a non-stick skillet over medium heat, sauté the turkey sausage until lightly browned.
Add the diced red bell pepper and fresh spinach to the skillet; cook for 2-3 minutes until the vegetables begin to soften.
Pour in the egg mixture over the vegetables and sausage, stirring gently to combine. Cook until the eggs are softly scrambled, being careful not to overcook.
Once the egg scramble is ready, remove from heat and sprinkle with the fresh herbs.
Plate the scramble alongside the roasted sweet potatoes and serve immediately.
