INGREDIENTS
12 oz Extra Firm Tofu (340g)
1 cup Asparagus (134g)
1 cup Cherry Tomatoes (150g)
2 tbsp Nutritional Yeast (16g)
1 tsp Olive Oil (5g)
Sea Salt, to taste
Black Pepper, to taste
PREPARATION
Press the tofu to remove excess moisture for at least 15 minutes. Then cut it into bite-sized cubes.
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Place the tofu cubes on the baking sheet. Drizzle with olive oil and season lightly with sea salt and black pepper. Toss gently so all pieces are evenly coated.
Bake the tofu for 25-30 minutes, turning once halfway through, until it becomes crispy on the edges.
While the tofu bakes, trim the woody ends off the asparagus and halve the cherry tomatoes. Spread them on a separate baking sheet, drizzle with a small amount of olive oil, and season with salt and pepper.
Place the asparagus and tomatoes into the oven during the last 15 minutes of the tofu baking time. Roast until the asparagus is tender and the tomatoes are slightly blistered.
Once both components are done, remove from the oven. Transfer tofu, asparagus, and tomatoes to a serving dish.
Sprinkle the nutritional yeast evenly over the tofu and vegetables for a savory finish. Toss gently to combine all flavors before serving.
