INGREDIENTS
6 oz Chicken Breast (170g)
1 medium Red Bell Pepper (119g)
1 medium Yellow Bell Pepper (119g)
1 tbsp Peanut Butter (16g)
1 tsp Cornstarch (3g)
0.5 tsp Chili Flakes (1.5g)
2 cloves Garlic (minced, ~6g)
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Preheat your oven to 425°F.
Slice the red and yellow bell peppers into strips and toss with a pinch of salt and pepper. Spread them on a baking sheet and roast in the oven for 15-20 minutes until they start to get tender and slightly charred.
While the peppers roast, prepare the chicken. Pat the chicken dry and lightly coat it with a mixture of cornstarch, chili flakes, minced garlic, and a pinch of salt and pepper.
Heat a non-stick skillet over medium-high heat. Add the chicken breast and sear on both sides until golden and crispy, about 3-4 minutes per side.
In a small bowl, whisk together the peanut butter with a splash of warm water to create a smooth, spicy sauce. Adjust consistency as needed.
Once the chicken is done, plate the seared chicken alongside the roasted bell peppers and drizzle the spicy peanut sauce over the chicken.
Serve immediately and enjoy your crispy spicy peanut chicken with roasted bell peppers.
