INGREDIENTS
7 ounces Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
1/2 tablespoon Olive Oil
1 clove Garlic
Salt & Pepper to taste
PREPARATION
Pat the 7-ounce salmon fillet dry and season with salt and pepper.
Heat a non-stick skillet over medium-high heat and add 1/2 tablespoon of olive oil.
Place the salmon fillet skin-side down in the skillet and sear for about 3-4 minutes until the skin is crispy. Flip and cook for an additional 3-4 minutes, or until desired doneness is reached.
While the salmon cooks, steam the green beans until tender-crisp, about 4-5 minutes.
In a separate pot, steam the cauliflower florets for about 8-10 minutes until soft. Then transfer to a bowl and mash with a fork. Stir in minced garlic and a pinch of salt and pepper for flavor.
Toss the steamed green beans with a little extra salt, pepper, and a drizzle of olive oil if desired.
Plate the seared salmon alongside the garlic mashed cauliflower and green beans, and serve warm.
