INGREDIENTS
6 oz Chicken Breast (170g)
1/3 cup Marinara Sauce (80g)
2 tbsp Parmesan Cheese (10g)
1/4 cup Whole Wheat Breadcrumbs (14g)
1 cup Green Beans (125g)
1 large Egg (50g)
1/2 tsp Garlic Powder
Salt & Pepper to taste
PREPARATION
Preheat oven to 400°F.
Pound the chicken breast lightly to an even thickness and season both sides with salt, pepper, and garlic powder.
In a shallow bowl, whisk the egg. In a separate bowl, combine whole wheat breadcrumbs with additional seasoning if desired.
Dip the chicken breast into the egg, then dredge in the breadcrumb mixture until evenly coated.
Place the coated chicken breast on a baking sheet lined with parchment paper.
Spread the marinara sauce evenly over the top of the chicken, then sprinkle Parmesan cheese over the sauce.
Bake the chicken in the preheated oven for 20-25 minutes until the internal temperature reaches 165°F and the coating is crispy.
Meanwhile, toss the green beans lightly with a bit of salt, pepper, and a drizzle of olive oil if desired, and roast on a separate baking sheet for the last 15 minutes of the chicken bake.
Once done, serve the chicken hot with a side of roasted green beans.
