INGREDIENTS
1 medium Sweet Potato (114g)
1 serving (2 oz) Lean Turkey Sausage (57g)
2 Large Eggs
2 Egg Whites
1/2 Red Bell Pepper (60g)
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Peel and dice the sweet potato into small cubes. Rinse and dice the red bell pepper.
Heat the olive oil in a non-stick skillet over medium heat. Once hot, add the sweet potato cubes and red bell pepper.
Season with a pinch of salt and pepper, and sauté for about 8-10 minutes until the sweet potato is tender and edges are slightly crispy.
While the vegetables are cooking, slice the lean turkey sausage into rounds. Add them to the skillet and cook for an additional 3-4 minutes until they are heated through and slightly browned.
In a separate non-stick pan, cook the eggs sunny-side up. Add the whole eggs and then the egg whites, cooking until the whites are set but the yolks remain runny.
Plate the sweet potato hash topped with turkey sausage and carefully place the sunny-side up eggs on top. Garnish with additional pepper if desired and serve immediately.
