1 medium Red Bell Pepper

PREPARATION
Preheat your oven to 425°F.
Peel and dice the sweet potato into 1/2-inch cubes, and slice the red bell pepper and onion into small pieces.
Toss half of the kale with a drizzle of olive oil, salt, and pepper. Spread on a baking sheet and roast in the oven for about 10 minutes until crispy.
While the kale roasts, heat the remaining olive oil in a large skillet over medium heat. Add the chopped onion and red bell pepper, and sauté until they begin to soften, about 3-4 minutes.
