INGREDIENTS
4 oz Chicken Breast
1 cup cooked Whole Wheat Pasta
1 cup Broccoli
1 tsp Extra Virgin Olive Oil
1/2 medium Lemon (juiced)
2 tbsp Mixed Fresh Herbs
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F.
In a small bowl, combine the juice of half a lemon, 1 tsp of olive oil, chopped mixed herbs, salt, and pepper.
Place the chicken breast in a shallow dish and pour half of the lemon-herb mix over it. Allow it to marinate for at least 15 minutes.
Meanwhile, toss the broccoli florets with the remaining lemon-herb mixture. Spread them on a baking sheet.
Place the marinated chicken breast on a separate baking sheet.
Roast both the chicken and broccoli in the oven. Bake the chicken for about 20-25 minutes until cooked through and the broccoli for 15 minutes until tender and slightly crisp.
While the chicken and broccoli are roasting, cook the whole wheat pasta according to the package instructions until al dente. Drain and set aside.
Slice the cooked chicken and serve it over a bed of pasta with the roasted broccoli on the side.
Drizzle with any remaining pan juices and garnish with additional fresh herbs if desired.
