Start your morning with a light yet satisfying scramble featuring fluffy egg whites, savory turkey sausage, and vibrant sautéed spinach. Finished with a hint of melted reduced-fat cheddar and a drizzle of olive oil, this dish offers a pleasing balance of taste and nutrition to energize your day.
INGREDIENTS
5 large egg whites (~165g)
2 turkey sausage links (~70g)
1 cup raw spinach (~30g)
1 tablespoon + 1/2 teaspoon olive oil (~22.5g)
1/2 ounce reduced-fat cheddar cheese (~14g)
PREPARATION
Preheat a non-stick skillet over medium heat.
Sprinkle the skillet with 1 tablespoon of olive oil and add the turkey sausage links. Cook them until they start to brown and are heated through, then remove and slice them into rounds.
In the same skillet, add the spinach along with the remaining 1/2 teaspoon olive oil. Sauté the spinach until it wilts, about 1-2 minutes.
Pour in the egg whites and allow them to begin setting. Gently scramble them, folding in the sausage slices.
Once the eggs are nearly cooked and still slightly creamy, sprinkle the reduced-fat cheddar cheese over the top. Stir until the cheese is evenly melted and the egg scramble is fully set.
Remove from heat and serve immediately.
