INGREDIENTS
6 oz Pork Tenderloin
2 tbsp Orange Juice
1 tbsp Olive Oil
1 medium Tomato
4 tbsp Red Onion
4 tbsp Cilantro
1 tbsp Lime Juice
1 cup Green Cabbage
1/4 cup shredded Carrot
Salt & Pepper to taste
PREPARATION
In a bowl, mix 2 tablespoons of orange juice with a pinch of salt and pepper. Marinate the 6 oz pork tenderloin with this citrus mixture and let it rest for 15-20 minutes.
Preheat your slow cooker on low. Add the marinated pork tenderloin and cook for about 3-4 hours until the pork is tender.
Once cooked, remove the pork and heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear the pork on all sides until the exterior becomes crispy. Slice the pork into serving portions.
Prepare the pico de gallo by dicing one medium tomato, finely chopping 4 tablespoons of red onion and 4 tablespoons of cilantro. Toss them together with 1 tablespoon of lime juice and a pinch of salt.
For the cabbage slaw, in a bowl combine 1 cup shredded green cabbage with 1/4 cup shredded carrot. Season lightly with salt and a little extra lime juice if desired.
Plate the sliced crispy citrus pork alongside a generous serving of pico de gallo and cabbage slaw. Serve warm and enjoy!
