INGREDIENTS
7 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower
1 clove Garlic
1/4 cup Low-Fat Milk (1.5%)
2 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season it with salt and pepper.
Heat a non-stick skillet over medium-high heat and add 1 teaspoon of olive oil. Sear the salmon fillet skin-side down first for about 3-4 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until cooked to your preferred doneness.
While the salmon is searing, steam the asparagus in a steamer or microwave with a splash of water for about 4-5 minutes until tender but still crisp.
For the garlic mashed cauliflower, steam the cauliflower florets along with the garlic clove until very tender (about 8-10 minutes). Transfer to a bowl, add the low-fat milk and the remaining teaspoon of olive oil, and mash until smooth. Season with salt and pepper as desired.
Plate the seared salmon alongside a serving of steamed asparagus and a generous scoop of garlic mashed cauliflower. Serve immediately and enjoy your nutritious dinner.
