Enjoy a delightful plate of tender pan-seared chicken paired with soft, homemade ricotta gnocchi and a bed of wilting greens lightly sautéed in olive oil. This dish brings together a comforting blend of savory and fresh flavors, making it a well-balanced meal perfect for dinner.
INGREDIENTS
5 oz Chicken Breast
1 serving homemade Ricotta Gnocchi (150g)
2 cups Mixed Greens (Spinach & Arugula)
1 teaspoon Olive Oil
1 clove Garlic
Salt & Pepper to taste
PREPARATION
Pat the chicken breast dry and season lightly with salt and pepper.
Heat a non-stick skillet over medium-high heat and add half the olive oil. Sear the chicken breast for about 5-6 minutes per side, or until fully cooked and golden on the outside. Remove and set aside.
In the same skillet, add the remaining olive oil and a finely minced garlic clove. Sauté briefly until fragrant.
Add the homemade ricotta gnocchi to the skillet. Lightly pan-sear them for 2-3 minutes until they begin to develop a slight golden crust.
Toss in the mixed greens and stir until just wilted, about 1-2 minutes.
Slice the chicken breast and plate alongside the sautéed gnocchi and greens.
Finish with a light seasoning of salt and pepper, and serve warm.
